I read in my book that they get paid €40 a month in their 4 months training, then after they've finished they get paid what they should have in training. Is that not true then?

Depends on what you consider pay. If it's financial gain, then forget it. You're not paid in money you're paid in wine and the privilege of picking grapes at Puyloubier with the Anciens, and, if the Anciens decide that you're suitable enough you may 'pay' for your stay in Aubagne and Castel by helping the local farmers cut and gather hay in the old fashioned way using scythes, as the grim reaper holds. If you are only thinking of joining for financial gain then chose another career as the Legion is not for you. I don't know why we are on here sometimes, C. A lot of these yunguns on other posts as well know more than what we do.
